Carrot Raisin Oatmeal Cookies Recipe

Cookies have been around for many centuries. There are many different versions of the early days of baking. They have evolved from what were then called “twice” baked flatbreads or pretzels. Many different cultures and civilizations have tried the art of baking cookies. Some were more of a stale flatbread, which eventually became a type of puff pastry bread or cookie. It then turned into a lighter to fluffier cookie, and then a smaller bite-size bar like a Madeline, and / or a type of cookie we’re familiar with today. Some of his efforts were tasty and some turned out to be sweet creations. I give credit to the Germans and the French for taking us to the sweeter side of things that have become the sweet cookies of our day.

Today we have bar cookies, fall cookies, chilled cookies, rolled cookies, and a few more. I think the most popular are drop cookies. The drop cookie was made very popular by the Tollhouse Company for the development of the chocolate chip cookie. The Quaker Company has also assisted in this effort by creating a rolled oatmeal cookie. Both are very popular gifts with many people across the country.

I have created an oatmeal cookie recipe that I hope you enjoy. This is a recipe for a carrot oatmeal cookie. It’s a healthier treat than most sweet desserts and tastes great if you’re a fan of oatmeal cookies. This is an easy recipe, it doesn’t take long, and it would be fun to make it with your kids.

Ingredients you will need:

1 1/4 cup carrots, grated

1 cup whole wheat flour

1/2 cup of raisins

1/2 cup I can’t believe it’s not butter

1/2 cup packed brown sugar

1/2 cup quick oatmeal

2 medium-sized eggs

1/2 teaspoon of cinnamon and a good vanilla paste

1/4 teaspoon nutmeg

1/4 cup warm water

1 teaspoon baking powder

1 tablespoon of powdered sugar

Non-stick spray

First, you will preheat your oven to 350 if it is electric and 325F if it is gas. If you have a convection fan, turn it off during baking. It will cause too much browning and these cookies will most likely be burned. You will need to spray your baking sheet so it’s ready to go straight to the pan after mixing all the ingredients. I recommend a square or rectangular tray for these cookies.

In a bowl, you will add the warm water, not the hot water, the margarine, the brown sugar, and the vanilla paste, and mix them together. Then you will add your eggs and you will beat it well, and you will mix with the sugar mixture. Then you will add the carrots and raisins, and the nutmeg and cinnamon, and mix well.

In a separate bowl you will add the flour, oats and baking powder and mix well. Once all the dry ones are mixed together, you will add the wet to the dry and mix well.

Pour into a nonstick skillet or drizzled skillet and bake for about 20 to 25 minutes. It will turn halfway through the baking process in the oven to ensure even cooking. Remove from the oven and let cool, and sprinkle with the icing sugar. When they are cold cut them into bars.
