To make the dressing, combine the minced garlic, olive oil, lemon juice, Dijon mustard, sea salt, and black pepper in a glass jar. Cover and shake until the ingredients are well combined. Combine the cucumber, onion, greens, and walnuts in a salad bowl, then add the dressing. Serve immediately.

Creamy Potato Salad

What do you need:

  • 1 kilogram. freshly cooked red, white, or yellow potatoes

  • 3 celery stalks finely chopped

  • 1 pickled gherkin, finely chopped

  • 1/2 red onion, finely chopped

  • 2 eggs, peeled and chopped

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup fresh herbs, chopped

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon yellow mustard

  • Salt and freshly ground black pepper

Fill a medium bowl with ice and then add cold water. Place the freshly cooked potatoes in the container for an ice bath. When cool, peel the potatoes and cut them into small pieces. Place in a large bowl and season with apple cider vinegar and salt. Set aside.
